Cooking in my kitchen today is mini meatloaf. I made these previously for bento lunches and small sprog happens to like them. Last night when she packed her bento, she was gutted to find that we had none of the meatloaves left. I still had some sausage meat left in the freezer from Christmas, so I promised to make her a batch today. The recipe is in my link above, but here's some step by step pictures to help.


Pork sausage meat, cheese and chopped onion for the meat loaf.

Add a grated carrot.


Season with salt and pepper.


Add breadcrumb and mix well to combine.


Form into logs or patties and place on oven sheet for cooking.


For a twist on the recipe I added some corn.


Ready for baking.
Just out of the oven! The gooey stuff is the fat which comes out of the cheese as it cooks.

Voila! Well I did have to taste some afterwards to make sure they were ok for lunches!
Oh yes, they were very tasty!
