The sun has been out here all day long and it is just gorgeous, pity I'm so tired I can't do much this evening. I think I'd fall asleep over my garden fork if I tried anything tonight :0)
Anyway, as the weather has been so nice here today I made pizza and a salad for tea tonight. I decided to make this wonderful german potato salad as a side too. It's quick and very tasty. It will keep in the fridge for a few days if you have any leftover, just as long as you have it in a sealed container such as a lock & lock.
4 small boiled potatoes.
1 onion
4 slices bacon
2 hard boiled eggs
mayonnaise
parsley
salt and pepper
Boil the potatoes in the skins and allow to cool before peeling. (I made this tonight with a 750g bag of baby potatoes and I didn't bother peeling them once cooked. It worked really well so I think I'll stick to this method. If you use regualr poataoes, a waxy variety would be good for this recipe as it won't go into mush when you mix the salad ingredients with the mayo. )
Slice or cube the potatoes.
Slice or cube hard boiled eggs.
Chop bacon into small pieces and fry off until cooked through. Drain and allow to cool. (I used pancetta cubes instead of bacon, you could use lardons too)
Chop onion finely, fry half and leave half raw. (If you don't like raw onion substitute some salad onions instead or you could just fry all the onion.)
Place all the above into a bowl and mix with mayo and parsley.
The amount of mayo and parsley you add is entirely up to you, it's all personal preference.
Mix well together, taste and season if necessary with salt and pepper.
Good with salads or as a side.
